ABOUT THE GARLIC FARMER

    Ethan Noto is a young Garlic Farmer in the  Hudson Valley region of New York State. He began farming garlic in 2012 at age 10.  That October, wonderful family friends Andrea and David took Ethan to the Hudson Valley Garlic Festival in Saugerties, NY where he could not believe his eyes.  He was positively overwhelmed with all the different varieties of garlic and products made from garlic available of which he was previously unaware.

    Ethan began to taste and appreciate all the different flavors of garlic, purchasing different varieties, and planting small crops on his own. He began to research garlic farming methods and has developed his own way of nurturing  his garlic crops each year.  

    Ethan began in 2012 planting just 12 garlic cloves in the fall to be harvested for the first time in the summer of 2013. Each year Ethan has over doubled his crops and now is planning to harvest over 2500 garlic bulbs in 2018.   Annually he carefully selects the best garlic cloves, separating them, and replanting them for the upcoming harvest. 

    Each year since 2012 Ethan has returned to the Saugerties Garlic Festival to converse with garlic farmers about growing, new and discontinued varieties, as well as the challenges surrounding current garlic growing. He is also impressed with all of the products made from  garlic and garlic scapes. 

    With over three dozen varieties of garlic grown at Noto Garlic Farm, Ethan is extremely busy in the fall and summer months planting and harvesting.  He does a great job of keeping the varieties separated.   Previous to him keeping track of these varieties, Ethan planted all varieties together which is now known as Noto's Original Mix originating in 2012. 

    Some of the products Ethan enjoys making from his garlic are pickled garlic, roasted garlic, and garlic scape pesto.   Sunday pasta & sauce is made for Italian dinner most weeks throughout the year at home using Ethan's garlic.  He is also learning about braiding garlic and is growing softneck varieties for the first time this year. Ethan's dream is to have the equipment and the time to produce black garlic. This has been a goal of his since he started. 

Our resident farmer also enjoys raising chickens for fresh eggs.  His chickens have had such names as Nugget, Wing, Fried, & Strip.  When not farming, Ethan enjoys hunting with his Papa,  fishing, playing board & video games, riding his  snowmobile, dirt bike, and four wheeler.  He really enjoys cutting glass, wood, & metal and making "cool stuff".  

    Ethan Noto is assisted annually in planting and harvesting his garlic by his father Kristopher, stepmother Jacci, and his Nonna and Papa - Sandi and Joe.   Ethan comes from a long family line of farmers, butchers, and restaurant, deli and catering experts.   Ethan has always had a love of food and cooking.  He enjoys helping his family make their own sausage, cheese, and many other delicious items from scratch regularly. He has a passionate love of cooking and baking.   Some of his favorite items to make are Beef Wellington, Empanadas,  Lobster, Fig cookies, Pastelillos, Venison, Pizza, Stromboli, and Meat Pies. Ethan is always creating something and he is very excited to share his Garlic, which he grows with love.
